Lemon Dill Pasta Salad & Vinaigrette

Summer salads and weekday meal prep can sometimes require a little inspiration to keep the menu exciting. This super easy recipe makes a great pasta salad but this vinaigrette can also be used as a marinade perfect for your next grilled chicken dinner!
I truly believe dill is an underrated herb. When given the chance it brings such life to even the simplest dishes. And you can’t forget all of the heath benefits of consuming honey and lemon. The combination is fresh and full of nutrition.
But you didn’t come here for a sappy story of why I love this recipe. But I’ll tell you quick anyway since you’re here. It’s fresh, tangy and just sweet enough to make you crave another bite!
Let’s start with the Vinaigrette, the star of the show.
Lemony Dill Vinaigrette Recipe
In a small jar combine:
1/3 cup olive oil
2 tablespoons of lemon juice
2 tsp Peace River Honey
1 tablespoon of apple cider vinegar
1 teaspoon of Dijon mustard
1 teaspoon crushed fresh garlic
2 tablespoons diced fresh dill
salt and pepper to taste

to make an easy salad (shown above) combine the following:
3 cups cooked pasta
1/2 cup crumbled feta
1/2 English cucumber diced
1/2 sweet onion diced

Need protein? add a can of drained chick peas or serve with a side of your favourite grilled meat. Think blackened chicken or pork souvlaki skewers.
