When you crave Chinese food what is on your order?
For our family it’s chicken balls, lo mein, chow mein and something different like sweet & sour ribs. When they’re almost candied and the meat just melts; that’s the good stuff. So why not make them at home to curb the craving?
Well I’ll be honest, everything I seen on cooking these involved boiling the ribs! I haven’t boiled ribs in close to 15 years. And now with my Pit Boss grill I know I can do it just as good by smoking the ribs instead of braising them. So let’s get started.
WHERE DO YOU BUY THE RIBS?
This cut of baby back rib is called “Asian style” or thin cut. They are technician baby back ribs. I found these at the local store but if you can’t find them simply ask the butcher to cut them for you. It’s worth it!

WHY DO YOU NEED TO COOK THEM BEFORE BRAISING THEM?
This is a great question. Whether you boil them (please don’t) or smoke them you’re going to get a better result with your pork. You’re tenderizing the meat, render the fat and adding more flavour when you smoke the ribs. Ultimately you can simply braise them in the sauce but you’ll end up with a lot more fat in your flavour profile.

WHAT PELLETS SHOULD YOU USE?
If you’re looking to bring out a bold smoky flavour choosing a bold pellet flavour like cherry or hickory would be great. If you’re looking for a milder flavour choose an pple or pecan pellet blend for your cook.
So now that we’ve covered most of the FAQ’s let’s get to making them.

RECIPE - BBQ SWEET & SOUR RIBS
INGREDIENTS
2-4 lbs of thin cut baby back ribs cut Asian Style
1 TBSP Pit Boss Sweet Rib Rub
Sweet & Sour BBQ Sauce (Recipe Here)
DIRECTIONS
Preheat your grill (or oven) to 250F.
Remove the membrane from the back of each rack of ribs.
Cut the ribs into pieces cutting the meat between each set of bones.
Season generously with Pit Boss Sweet Rib Rub or a sweet rub of your choice.
Place the ribs on a wire rack (or directly on the grill grates) and smoke at 250F for 2 hours.
After 2 hours, increase the grill temp to 300F and place ribs into a foil pan or baking dish. Pour the Sweet & Sour Sauce all over the ribs covering them. Cover the pan or dish with foil (or a lid) and braise for 1-2 hours.
Remove from heat and serve. Garnish ribs with sesame seeds, chili flakes and or scallions.
