Smoked Nuts & Bolts

This is a recipe I came to love and tweaked over the years. I started by making it annually at Christmas for family in my oven. Then a friend suggested that I should try making them on my smoker and I have never looked back. The wood fired flavour adds so much to one of my all time favourite party mix recipes. 

This recipe is as much a guide as it is calculated to get you a great batch of savory snacks. You can swap ingredients or even add extras. Sometimes I will omit the mix in items like peanuts to accommodate dietary restrictions.

If you like a spicier version add in the cayenne. I leave it out because my kids don’t yet appreciate the extra flavour it brings.

Note this recipe is great in the oven or on the grill. The recipe works great in both.

WOOD PELLET SUGGESTIONS

You can really alter the flavour by choosing a hold wood flavour like hickory or mesquite. I like using a blend and typically use the Pit Boss Competition Blend pellets for this recipe.

 

SMOKED NUTS & BOLTS - PARTY MIX


RECIPE


SAUCE MIXTURE

Boil in a sauce pan heat and combine: 


  • 1.5 lb butter (one and a half bricks)

  • 5 TBSP Worcestershire sauce

  • 1 1/2- 2 TBSP Garlic Powder

  • 1 1/2- 2 TBSP Onion Powder

  • 1 TBSP Celery Salt

  • 1 1/2 TBSP Chili Powder

  • 1/8- 1/4 TSP dried Cayenne or Chipotle (if you like spice) 


MIX

  • 1  small box Cheerios

  • 1 box Shreddies (or Chex)

  • 1 bag pretzels

  • 1.5 cups peanuts

  • 2 boxes cheese crackers or sticks


OPTIONAL SUGGESTIONS: Almonds, corn chips, Bugles, Shreddies, wasabi nuts, gold fish crackers, etc!


Use your imagination and let your pantry be your guide. I will omit the peanuts and nuts when doing gifts or large groups when allergies are uncertain.


DIRECTIONS


Add all mix snacks to a large pan or bowl. Pour mixture over and mix well.


If using a grill: Smoke at 180F for 1 hour mixing every 15 minutes then bump heat to 225F and cook for 2 more hours mixing every 15 minutes.


If using an oven: Cook on low 225F mixing at every 15 min for 2.5-3 hours. I did smoke at 180F for the first hour.


PELLET RECOMMENDATION:

Cherry or Competition Blend pellets are my go to!
