There is always that one pot luck staple that I get excited for when I go to an event. DEVLLED EGGS. It's ironic though since growing up I despised egg salad sandwiches.
Now the devilled egg is a tasty creation combining hard boiled eggs, mayonnaise, mustard and spices. They truly are game changing elevated when you add a little wood-fired smoke. Below are my tips, tricks and my fave recipe for making devilled eggs. Eventually you like me, will just eye ball your ingredients and start to experiment with your own combos and add ins.
One year for Christmas dinner I said I wanted to be the one to make and bring the eggs. I failed so badly I cried. I was also pregnant at the time. I couldn't get the eggs to peel right and it was a horrid mess. Truly horrific moment and I was bound and determined to master the art of making these from that point on. I am pleased to say I make a mean batch of devilled eggs today.
HARD BOILING EGGS
Boil the water BEFORE adding the eggs.
Add a TSP of baking soda.
Boil eggs for Approximately 12 minutes
Drain water and place eggs in an ice bath. (this is the second key tip to getting eggs to peel clean)
Chill until eggs are cool.
Peel.
SMOKING EGGS
Now there is a few ways to tackle this. You can smoke only the yolks, you can smoke the whole egg or you can smoke them sliced in half. I choose to do them in half because I love the wood-fire kiss.
Doing this at a low heat is important or you will end up with crispy whites. Not really an ideal egg. If that happens I have been known to just make egg salad out of it, leave it over night in the fridge and then eat it the next day for lunch.
It is important to peel eggs before smoking them.
TO SMOKE
Set and pre-heat grill to run 165-180F. Smoke the eggs for 30 minutes max. After that I found you were getting the harder outside. I use my pellet grill and place my eggs cut in half length wise on a slotted baking pan or directly on the grill. Doing it on a pan makes taking it on and off easier.
I make my devilled eggs right as they come off the grill. You can let cool, refrigerated or eat as is if you want.
DEVILLED EGG RECIPE
Makes 12 Devilled eggs
Prep : 15 minutes
Total Cook time: 30 minutes
INGREDIENTS
6 eggs
1/4 cup of Hellman's mayonnaise
1/2 TSP mustard
1/8 TSP salt
1/8 tsp Chili Powder
Smoked Paprika
Fresh Chives
DIRECTIONS
Once you have boiled and smoked your eggs above, scoop out yolks into a small mixing bowl. Fluff yolks with a fork.
Combine yolks with mayonnaise, mustard, salt, and chili powder. Mix until smooth.
Pipe or spoon mixture into egg whites.
Sprinkle with Paprika and diced chives.
Chill and serve.
