Bring your own spoon if you want some of this Rhuby red strawyberry crisp.
Here’s my trusted recipe using fresh picked Rhubarb and strawberries. You can also make this using frozen ingredients if fresh is not an option.
STRAWBERRY RHUBARB CRISP RECIPE
FILLING:
2 pounds rhubarb sliced 1/2-inch thick
2 pints strawberries hulled & cut in half
1 1/4 cups sugar
3 TBSP flour
2 tsp lemon juice
1 tsp vanilla extract
CRUMBLE TOPPING
1 stick softened butter
1 1/4 brown sugar
1 1/4 cups all-purpose flour
1 cups rolled oats
1 1/2 tsp cinnamon
3/4 tsp salt
DIRECTIONS
1. In a bowl combine chopped rhubarb, strawberries, sugar and lemon juice. Stir and leave 5 minutes.
2. Add flour and vanilla stirring and pour the mixture into a 9x13 baking dish or other oven safe equivalent dish.
3. In another bowl combine all topping ingredients and stir until blended.
4. Cover the strawberry rhubarb mixture with the crisp.
5. Preheat your Pit Boss grill (or oven) to 350F.
6. Bake the dessert for 45minutes or until the fruit bubbles.
7. Let cool 5-10 minutes and serve.
8. Pairs perfectly with vanilla iced cream.
